Happy Birthday, Brooklyn! For Brooklyn's birthday, I am giving her my lumpia recipe! Brooklyn is one of my awesome financial advisors whom I also consider my friend. She is a foodie like me and expressed the desire to cook Filipino food for her husband. So what better way to start than giving her my lumpia recipe. If you're reading this, then it's your lucky day because here, you will find my Filipino lumpia recipe. Enjoy!

Peachie's Delicious Filipino Lumpia Recipe

1 tbsp avocado oil

1 lb ground pork

4 cloves (minced) garlic

1/2 cup chopped onion

1/2 cup minced carrots

1/2 cup chopped scallions

1/2 cup thinly sliced purple cabbage

1 tsp salt

1 tsp pepper

1 tsp garlic powder

1 tsp soy sauce

25-30 lumpia wrappers defrosted

2 cups peanut oil for frying

Heat up a large wok at high heat. Pour in 1 tbsp of avocado oil.

Cook the pork until there's no more pink that's visible.

Scoop out the pork and set aside.

Drain some of the accumulated oil/water from the wok. Leave a tiny amount so that you may cook the veggies.

Saute' the garlic, onion, carrots, scallions and cabbage until soft.

Add the salt, pepper, garlic powder and soy sauce. Mix until well blended. Mix in the cooled pork.

Turn off heat and let it cool.

Place 1 tablespoon of the pork filling diagonally near one corner of each lumpia wrapper, leaving a 1 1/2 inch space at both ends. Fold the side along the length of the filling over the filling, tuck in both ends, and roll neatly. Keep the roll tight as you assemble. Moisten the other side of the wrapper with water to seal the edge. Cover the rolls with plastic wrap to retain moisture.

Once you have everything wrapped, use the same wok and pour in the peanut oil.

Place each wrapped lumpia carefully. Do not overfill the wok.

Fry each lumpia until golden brown (about 3-5 minutes).

Pair with sweet & spicy sauce.
